BUFFALO YOGHURT, FARM UNDER THE BALKAN
The farm "Under the Balkan" produces natural dairy and meat products from buffalo, sheep, cow and goat milk and meat.
The buffaloes and sheep they breed are of rare Bulgarian breeds - Bulgarian Murra buffaloes and Karakachan sheep, free-range on the pastures of the central Balkan Mountains.
Nikola Kulov, a hereditary Karakachan, and his wife Tanya keep 900 Karakachan sheep, 150 Bulgarian Murra buffaloes, over 200 goats and over 200 cows (including beef cows). Their children Agora and Jani, as well as his brother and his family, help with the farm and sales.
During the late autumn and the whole winter until early spring the Karakachan sheep of Kulovi graze in the Sub-Balkan and the foothills of the Sredna Gora, and in the summer and early warm autumn they are in the pasture area "Ravnets" of the National Park "Central Balkan". Throughout the grazing season, the buffalo find food and coolness around the Byala Reka and Nevolya rivers.
The unique taste of the dairy products of the farm "Under the Balkan" is due to the combination of breed, soils, air, free pasture farming in the Balkan, as well as the traditional Bulgarian recipe of production and ripening - only with rennet yeast and lactic acid bacteria.
BRINZA FROM COW'S MILK
The so-called branza is a cheese (cottage cheese) with finely chopped pieces of soft cheese. In the old days they used to store the product in leather bags, which is why it is also known as 'meats cheese'. Today this practice is not applied, we sterilise the brinza in jars. The cow's milk comes from animals reared entirely on pasture in the foothills of the Rila and Rhodope mountains.

FARM SHEEP'S MILK CAKE
Kathak Bagri is made according to an artisan recipe. It is made with full-fat sheep's milk, as tradition dictates. It contains only milk, starter and salt. The shelf life is short, but the taste doesn't allow it to last more than a few days in your fridge anyway. We recommend it both for spreading on toast and for snacking at any time of the day!

FARM SHEEP'S MILK CHEESE
Bagri Farm's cheese is created according to a traditional mandragi recipe, with all processes from fermentation to steaming and kneading done by hand. They work with raw milk, which is obtained directly from their grazing animals. It is not worked with high temperatures, which allows its beneficial bacteria and qualities to be preserved. The artisanal cheese develops many aromas and flavours that are reminiscent of the grass that the sheep graze on and the terroir where they are reared. It's good for the body and gut microbiome, rich in vitamins and minerals, and is a great addition for wine and gourmet lovers, as well as snack masters!

COW'S YOGHURT "FARM YARLOVO"
The natural cow's yoghurt from Yarlovo farm is prepared according to a homemade recipe with Bulgarian starter from the two popular in Bulgaria strains of lactic acid bacteria Lactobacillus bulgaricus and Streptococcus thermophilus.
The farm is located 35 km from Sofia, on the southern slope of Vitosha Mountain.
The cows, whose milk is also used to make cheese, cottage cheese, cottage cheese, butter, etc., are grazed from early spring to late autumn and fed with hay and forage in winter.
