Aged for 16 months at the Villani plant in Pastorello di Parma, in accordance with the H.P. labelling rules. - The meat is salted and then left to rest for the necessary time to ensure a careful, gradual curing process.

The farm "Pod Balkan" produces natural dairy and meat products from buffalo, sheep, cow and goat milk and meat.
The buffaloes and sheep they breed are of rare Bulgarian breeds - Bulgarian Murra buffaloes and Karakachan sheep, free-range on the pastures of the central Balkan Mountains.
Nikola Kulov, a hereditary Karakachan, and his wife Tanya keep 900 Karakachan sheep, 150 Bulgarian Murra buffalo, over 200 goats and over 200 cows (including beef cows). Their children Agora and Jani, as well as his brother and his family, help with the farm and sales.
In late autumn and all winter until early spring, Kulovi's Karakachan sheep graze in the sub-Balkan and foothills of the Sredna Gora, and in summer and early warm autumn they are in the Ravnets grazing area of the Central Balkan National Park. Throughout the grazing season, the buffalo find food and coolness around the Byala Reka and Nevolya rivers.

It is made with medium ground pork, selected from only the finest cuts. With absolutely no dairy flours, it is stuffed into natural casings /worms/ and tied in various sizes. It is then ready to be hung to rest during the drying phase, which removes excess moisture and naturally toughens the meat. Humidity and temperature are kept constant until each size of salami is dried to perfection. Ideal for those who like spicier flavours.

Strogino is a salami to savour, with a truly amazing taste. Incredibly tasty meat, the best of all pork meats.
Very delicate, it will delight the palate of all those lucky enough to taste it with all its sweetness.
The particular origin of the meat makes Strolghino a truly exceptional salami. The maturing time of this salami is relatively short, 15-20 days, resulting in a very delicate product, resembling 'fresh raw sausage meat', aromatic, soft and slightly sweet. Consequently, even in Italy, Strolghino salami has only been available for a few months and only in certain areas. In the Italian cities of Cremona and Parma alone, the maturing time for Strolghino can be as long as three months. Vacuum packaging and branded kraft paper protect the taste.

FILLET AGED IN BAROLO WINE DOCG, SALUMIFICIO CHIAPELLA
A typical seasoned product derived from pork tenderloin. The Barolo fillet is accredited by the Piedmont Region as a PAT 'Traditional agri-food product', strictly produced in this area. Once the pork fillets have been selected, the fat is removed and the pork fillets are trimmed with care and delicacy. Salting is then carried out by 'dry' massaging with sea salt several times and over several days.
The fillets are then "drowned" in Barolo D.O.C.G . wine; alternating rest and massage until the wine is completely absorbed. The product is then stuffed into casings and dried and cured under optimal temperature and humidity conditions to enhance the product's characteristic taste, smell and texture.
